Increasing need brings students together to problem solve
A growing number of studies show that hunger on university campuses is on the rise. As tuitiion and fees increase, students look for ways to cut costs and for many it's food. Seeing the need, more than 30 students at University of Oregon recently took part in Oregon Food Bank's FEAST (Food, Education, Agriculture, Solutions Together). Participants spent a Saturday discussing how to build a healthier, resilient food system.
'Lots of great ideas came out of the event,' said Taylor, an undergraduate coordinator at University of Oregon. 'Students left feeling like there were tangible things that could be done." Ideas that came out of the planning session include a free produce drop, expanded hours at a nearby student pantry, ride sharing service to discount grocers and workshops on cooking, gardening and budgeting. One group reactivated the Just Food student coalition and is already expanding activities around food justice issues.
"Ultimately, it's about offering students the resources they need to grow and thrive while on campus," concluded Taylor.
