CEPEK  - a youth's permaculture cooperative in Quixaya, San Lucas Toliman is excited to start drying their farm products for the local market!

CEPEK is a group of 30 young farmers who are reviving natural farming in an area previously run as a sugar cane plantation. Over the last 8 years their membership has grown as they offered free Tilapia fry (baby fish) to other farmers to start producing more protein. A progressive group, they have 3 women in leadership roles in the Board of 6 people.

They hope the solar dehydrator will bring additional income to the cooperative, allowing them to dry herbs and fish to preserve them for transport to the market. They also plan to dry bananas and mangos to sell as school snacks

Even better, ATC is handing over the build instructions so they can copy our design for free.  The dehydrator arrives to Quixaya on January 17th where we will hold a workshop on how the machine is built, maintained and best used for drying. We will then have a workshop led by Isabel, from the San Marcos La Laguna Women's cooperative, to teach recipes and techniques for using the dehydrator.
