Culinary students sponsored by Bio-Benin are currently learning the importance of paying strict attention to hygiene when preparing food or beverages, including fruit juices and beer.
"M. Guillaume is very strict when it comes to hygiene and we all must pay attention," says Aimée one the apprentices Chez Guillaume who hopes to open her own business once she finishes her training. "He's also insisting that we compost food waste so that it can be used on the farm."
Students are taught to wear a clean uniform to work each day, to wash their hands frequently and keep the kitchen floor and tabletops clean at all times. They also learn how to store food correctly in the refrigerators so that it doesn't spoil.
"At first students need constant reminding about hygiene," says Guillaume Lonhoudjo, their director and mentor."But after a while it becomes the natural way of doing things, in every part of their lives."
After three years of this rigorous training students qualify for a Certification de Qualification de Métier (CQM) which enables them to get a job in a restaurant or start their own business. Bravo! says Bio-Benin
