New Activities & Enriched Learning Experiences

Summary of Activities

The section below outlines the key activities delivered during the final six months of 2025 (July-December 2025). Throughout this period, clear progress and positive transformation were evident among the trainees, as they strengthened their skills, expanded their knowledge, and grew in confidence through hands-on practice at both the Training Center and the Training Restaurant. This six-month phase was marked by a number of important events and milestones that supported trainees’ professional growth as well as their personal development. Collectively, these activities played a critical role in the program’s success, providing meaningful learning opportunities that extended well beyond the classroom.

  • Professional Development:

KOTO provides various opportunities for the trainees to develop their professional skills which not only enhance their expertise but also bring joy and memorable learning experience. 

  • Master Cooking Class - August 2025

 In August 2025, a Master Cooking Class for KOTO Class K43 Back of House trainees was led by Ms. Lillie Giang, a celebrated Australian chef and culinary instructor known for her passion for sustainability and frequent appearances on Australia’s National TV Channels 7 and 10. The session focused on developing a canapé menu that included vegan and vegetarian options, while emphasizing the creative use of rescued ingredients to promote sustainable cooking practices. Ms. Lillie demonstrated three signature dishes before guiding trainees through their own hands-on cooking practice. Trainees experimented with a range of rescued ingredients such as almond powder, canned cherries, flavor pearls (vinegar & shallots; lemon & pepper), honey mustard, hot English mustard, cheddar cheese, vegetarian white combi cheese, and dry basil leaves. The class successfully encouraged innovative thinking, environmental awareness, and practical culinary skills - inspiring trainees to value both creativity and sustainability in their future culinary careers.

  • Internship - November 2025

K45 trainees undertake their internship at Vinpearl Nha Trang, a well-established and reputable hospitality group, where they are exposed to professional, real-world working environments that closely reflect industry standards. This internship provides trainees with valuable hands-on experience, allowing them to apply their technical and soft skills in a commercial setting, build professional confidence, and better understand workplace expectations. Through this placement, KOTO continues to strengthen meaningful industry exposure for trainees while reinforcing strong employment pathways, supported by strategic partnerships with leading hospitality businesses that enhance graduates’ long-term career prospects.

  • Support Party Event at VinPalace Co Loa - November 2025

In addition to honing their skills at the KOTO training restaurant, trainees are also provided with valuable opportunities to practice their professional skills in five-star hotels. Notably, in November, K46 trainees supported a party event at VinPalace Co Loa, a renowned cuisine and convention center in Hanoi, gaining hands-on experience in party setup, guest service, and other essential hospitality operations.

  • Personal & Interpersonal Development:  

In addition, KOTO organizes a range of meaningful activities to enhance trainees’ personal and interpersonal development. These activities play a crucial role in helping trainees build confidence, resilience, and foster meaningful relationships both within and beyond the classroom. By participating in such events, trainees gain the necessary skills to navigate diverse social environments, which are essential for their personal growth and future success in the workplace and the community.

  • Community Service - July 2025

KOTO Class K43 trainees carried out a meaningful community service project to support disadvantaged residents in the Bach Dang area, Hanoi, where they prepared and served 120 lunch meals and distributed 80 gift packages to local families in need. The trainees took full responsibility for the event - from planning, menu design, meal preparation, and service, to organizing interactive activities with children and community members. Through this experience, they strengthened key professional and interpersonal skills such as event planning, teamwork, coordination, time management, and professional communication.

Seeing the trainees work diligently and apply what they had learned at KOTO to give back to the community was truly inspiring. One trainee shared, “After participating in the community project, I learned empathy and a sense of social responsibility. I realized that small actions such as listening, sharing, or contributing together can create positive change. I also improved my teamwork, communication, and organizational skills. Most importantly, I understood that anyone can contribute to the community in their own way, as long as they have the heart and commitment.” Another trainee reflected, “Every lesson was meaningful to me. I saw the elderly and children finding a spark of hope for the future. That gave me the motivation to try harder in life. This event was a precious experience not only for me but for everyone.”

The project not only brought warmth and joy to the community but also deeply nurtured empathy, gratitude, and a sense of purpose among the trainees - reinforcing KOTO’s mission of learning, giving, and growing together.

  • Mindfulness Retreat - August 2025

The Mindfulness Retreat for KOTO Class K43 trainees took place in Ta Van, Sa Pa, Lào Cai from August 4-8, 2025, led by Coach Luong Ngoc Tiên, One Life Connection’s Founder, with the participation of Mr. Jimmy Pham, KOTO’s Founder, and KOTO trainers. Through various mindfulness practices such as meditation, grounding, dialogue walks, and circle sharing, trainees learned to cultivate awareness, compassion, and gratitude while reconnecting with themselves and others. The retreat provided a peaceful environment for reflection and self-discovery, away from daily routines. One trainee shared, “What I loved most after the retreat was the stillness and the deep connection with myself and those around me. I could listen to my thoughts and emotions more clearly, regenerate my energy, and appreciate simple things like a slow meal, the sound of the wind, or a quiet moment.” Another expressed, “I feel more open because I’ve learned to understand mindfulness more deeply, how to manage my emotions, and how to behave more thoughtfully toward others.” A third reflected, “To understand – myself, my friends, and those around me; to love – myself and the people beside me; to show compassion – through forgiveness, care, and kindness; and most importantly, to have a grateful heart that loves and values those around me.” The retreat not only nurtured mental and emotional well-being but also strengthened the trainees’ sense of gratitude, empathy, and inner peace, values that will continue to guide them in both their personal growth and professional journey.

  • Dream Trip - October 2025

Every year, KOTO takes its newest trainees on a special 6-day trip named “Dream Trip”. This annual six-day journey takes our trainees to explore the world of hospitality industry as well as immerse in the beauty of Vietnam. This year marked KOTO’s 26th Dream Trip, organized for K45 and K46. 

Trainees at KOTO come from various backgrounds of hardship and oftentimes have never had the opportunity to take a holiday or travel to different parts of the country and experience the service of 5-star hotels and restaurants as guests.

This year, K45 and K46 embarked on their Dream Trip to Hue, Da Nang, and Hoi An. More than just a holiday, the trip was a transformative experience that fostered a deeper understanding of the hospitality industry, built confidence, and helped trainees discover more about themselves, shaping their career aspirations. Along the way, the trainees engaged in various team-building and communication activities, making the journey both educational and inspiring.

  • Recreation & Celebrations:

Besides activities and events that boost trainees’ professional, personal and interpersonal development, KOTO also organizes a variety of recreation and celebration activities for its trainees that offer both joy and relaxation. These experiences are vital to promoting trainees’ overall well-being and fostering a strong sense of community, demonstrating the KOTO family’s “We Are One” spirit.

  • Music Concert - October 2025

Trainees participated in a music concert hosted by the Vietnam National Academy of Music, providing them with a valuable opportunity for cultural enrichment and artistic exposure. This experience allowed trainees to engage with high-quality performances, broaden their cultural awareness, and enjoy a meaningful break from their intensive training schedule. More importantly, the activity reflected KOTO’s commitment to holistic care, recognising that emotional well-being, personal growth, and cultural appreciation are essential components of long-term development, alongside vocational and technical training.

  • Christmas Party - December 2025

A Christmas party was organised to create a warm and inclusive space where trainees could come together to celebrate the festive season, share experiences, and enjoy a sense of belonging. The event provided an opportunity for trainees to connect, bond, and interact with fellow students across the training centre, strengthening relationships and fostering a supportive community spirit.
